Rosette construction caused a few headaches but after modifying my hot bender things went much better... I use a soldering iron in a vice for the fiddly bits.

Bracing now bonded to the soundboard, and the rosette cleaned up and the front lightly sanded. Sealer coat of blonde french polish applied to the front to help with avoiding fingermarks.

Question for you electronics guru's out there: Belatedly thinking about pick-ups for this build and because of the angle of the saddle at the bridge I don't think conventional soundhole/bar pick-ups will work as the string spacings will be wrong (how much tolerance in string spacing is there with these beasts?) So thinking about K&K's with three pads. Currently I have a central reinforcement pad so I'm thinking that to use K&K's I will need to add a pair of small additional wings to the central pad so the K&K's are anchored to the same substrate materials/thickness'? I don't want to add the additional wings if they're not required - any thoughts please ladies and gents? Proposed wings:

The added bridge plate bits will work, I would think, if you are going to use the K&K pickups.
I don't understand the bit about string width across the sound hole not allowing for other types of pickups. Won't you have to arrange the (slanted) bridge so that the string spacing feels 'conventional' for fingerstyle playing ie the perpendicular spacing across the strings just in front of the bridge is normal, even if the actual spacing at the bridge takes account of the angled length of the saddle?
I know folk here are not fond of undersaddle piezos, but the standard fishman still covers all six strings in my fanned bridge with a 20mm difference in scale length.

Thanks Kym, Not keen on the under saddle jobs. My concern on the pick-up pole spacings is that they're (to me) positioned under a harmonic point at the sound-hole. With the bridge slant the harmonic position will also be slanted at nearly the same angle as the saddle (slightly less). This would require pick-up pole-positions to be wider to compensate for that pick-up rotation.
Looks like the K&K will be the better option.

As a player the K&K and a mag sound-hole pickup sound and play quite different, so to me that is a dominant deciding factor as well as what you'd like to fit.
I like the K&K myself for its more acoustic sound, but use a temporary sunrise mag pickup when I'm playing with the band. Nearly anyone can quickly add a temporary sound-hole pickup if needed, but not a K&K.
My thought on the K&K is that the wings are not __needed__. It'll just sound very slightly different. In this area the bridge dominates. I'd bear in mind that removing the K&K from cedar is a bit more challenging than rosewood(?)
With regard to the pole width I wouldn't worry too much. I've measured string spacing at the pickup between 48mm to 52mm for typical acoustic guitars, so there's a lot of mismatch. The sunrise pickup has a 51mm pole spacing, and can you see players using these in all those guitars quite happily.
Also, sometimes life can work in your favour. For a 15 degree saddle 9th parallel fan fret you'd increase the required pole spacing by about 0.4mm so for most 1 11/16 necked guitars it would actually make the situation technically better not worse!

I'd go with "wings" just in case.
I was also wondering if the hefty braces next to the K&K transducers might have an adverse effect, but then the four pad K&Ks seem to work fine on classicals with that brace up the middle right by two of the pads so I'm probably talking through the wrong orifice!

The wings certainly tightened the top up and brightened the tap tone. Sides positioned on the top plate. Tail block is fitted, the neck block is just placed in position - I need to extend it to support the dusty end of the fretboard. Sides resting on the top plate:

More progress this weekend, I now have the front and back plates fitted to the sides - not glued up yet, waiting for the K&K pure mini to arrive - I want to fit that before final assembling of the body. Just a few bits of masking tape holding parts together for now...

The cherry and the cedar are well matched, aren't they? Looks almost like the same timber all round. Must be encouraging to see it all coming together. Now where's that postman?
