Audacity is very good and very easy to use compared to most DAWs. I have a more recent version of Cakewalk than Keith's (it came in the package with my very versatile G Track mic., mentioned in another thread), but even so I make all basic recordings in Audacity because multi-tracking is so transparent, and then import to Cakewalk for editing. The hardware's the same whichever system you use, after all.
Reaper is also worth a look, with the caveat that it has a steep learning curve. It's a commercial product but has a seemingly endless evaluation period. How long you keep it installed depends on whether you think it's worth the expenditure or whether you have a nagging conscience like mine!
