This is tough, and some great suggestions so far, but here's my thoughts Ben - based on your musical ambiance and your wide vocal range:
Boyzone - When you say nothing at all Something by Eric Bibb - Ribbons and Bows maybe? Trust your Cape as a bit of fun? Clapton - Holy Mother S&G - Sound of Silence Something from Christie Moore's setlist / style - The Contender / Motherland? Sting - Fields of Gold maybe as per Eva C Knopfler - something recent, like Rivertown Some blues - Goin' Down Slow Dylan - Make you Feel my Love A bit of Rag (!!!) - Mr Crump? And my two wildcards are - Lying in the arms of Mary by Sutherland Brothers & Quiver, and Make me Smile - Cockney Rebel
I can play (murder) some of these - you'd do them justice!
Hope this isn't too far off beam...
Peter
