I totally agree about how emotive they sound, but not sure I would like to play them. I was today years old when I found out that the name comes from píobaí uilleann ("pipes of the elbow"). There is no historical record of the name or use of the term uilleann pipes before the 20th century.

I had a mate who played the pipes of the elbow. In truth he spent more time fettling reeds than playing the things.
Cello would be my answer to the original question. So emotive, so versatile.

Having had a think I'd love to play drum kit, but any and all percussion would be good.

Hope she lives in a detached house. I can't see my neighbours putting up with that. I'd go for something quieter, like the kora.

They are definitely my favourite of the bagpipes. And like most of this type of instrument, they always sound so much better, in person. I'd like to be able to play violin, as it would also open up a vast array of other bowed instruments.

There are two instruments I've always wanted to play- Baroque Lute (though fear I would spend the majority of my time left on this earth trying to tune the blasted thing) and then, when I had my right hand problems a couple of years ago I thought seriously about taking up the Viol Da Gamba. I may still do that. Like Keith, I find the cello very close to my heart (quite literally when you play one) and the larger of the viol family is a similar size and range, but...it has frets Robbie

Yes, I'm with the Viol da Gamba fans. I once heard one, I think, with gut strings (do they all have gut strings?) and the sound was nice and mellow - marvellous.
But really, I've always wanted to be able to sing. What I mean is to have real control over the voice as an instrument. Not the popular stuff but the Ben Luxton and Bryn Terfel type repetoire - and to be at their level.
Just in case you are tempted - no, not everyone can sing - I know this.

Keith Cello for me too. I love how it complements the guitar and the cellos steal the show on my favourite Bjork albums Homogenic.
