You also mentioned Brook in your original post, and as an owner of two fine Tavys myself I can vouch for their impressive sonic prowess! I've played a large number of Tavys, but by far the one that still haunts me with its wonderful, homogenous, orchestral sound is an all maple affair. Seriously luscious bass. I find Tavys to be very flexible- my 12 fret for example has a wonderful fingerpicking tone, but sounds like a monster dreadnaught strummed as well. The basic model would be well within your price range and you may be able to get a few 'upgrades' as well, such as a cutaway, or some fancier tone woods. Well worth considering.

Thanks everyone for all the feedback and suggestions I've decided to give Martin's Taran a go whilst continuing researching and playing anything interesting I can get my hands on.
