Best signal is when anything goes wrong, glare at the bass player!
Eye contact, body language, empathy and playing together a lot help, plus having a "default" version of a song that can be varied when nec.
A circling head for "go round again from the start" is something I do on occasion.
Used the "foot out" one in trad sessions a lot - the set leader sticks foot out when coming up to the change for the next tune. I used to shout "CHANGE", but wind instrument players can't do that...
