I liked (actually hated) the Felix the Cat model a while ago. Out of interest a few days ago I checked how many standard models Martin offer, 142, that's without custom models like that beauty.

Yes they stay in tune better (once strings have settled in) because there is no movement in the neck or body.

Yes birch was standard on Gibson mandolins in the 1910s. Sorry I don't know much about its use in guitars.

Those are knots and indicate very cheap wood and shouldn't be there. What is it? Is it a laminate top?

Hi Robbie, you can use single guitar strings, strings aren't generally made specially for OMs or mandolins just cut differently.

In my experience sapele has a slightly warmer tone than mahogany. I prefer it, its one of my favourite tonewoods.
